“Let Us Be Good” Dressing



Lettuce can so easily go limp and bad before you’ve had a chance to use it at its fresh, best self in a salad. As one NZ most thrown out food this easy peasy dressing is a great way to save your lettuce!
“Let Us Be Good” Dressing
Ingredients
large handful of lettuce
3 big tbs of plain Greek yoghurt
tbs of pesto or any scrapings out of an end of a container
leftover peas 1/4 cup or so
2 cloves of garlic
juice and zest of one lemon
2 tbs olive oil
salt and pepper to taste
Method
Add into the blender in order of ingredients.
Whizz up together till smooth, if mixture does not blend well add a little more oil . Store for a couple of days in a repurposed glass jar in your fridge.
Serve with salad, or as I have done with crumbed salmon!
