Goodbye, summer - Hello, autumn! While I’m sad to see the end of the long sunny days, I cannot wait to share with you all the beautiful autumnal and winter-inspired recipes I have up my sleeve. I’m often guilty of buying too many but when the leftovers can create something delicious like this, it’s not a bad problem to have!

Roasted Pork & Fig with Late Summer Vegetables Tray Bake

For those fortunate enough to have a fig tree in your backyard... lucky you! This delicious one-tray dish really showcases the flavour and versatility of the unsung hero of fruits. Extremely versatile, figs go great with both sweet and savoury flavours including roasted pork. Adding a new dimension to the meat, the sweet and salty combination of this recipe will make you swoon! Oh, and did I mention figs are rich in minerals like potassium, calcium and magnesium? What’s not to love!

No-Bake Passionfruit Cheesecake Slice

The recipe you don’t want to miss! I absolutely love passionfruit and loved putting this recipe together. I know it isn’t always available everywhere, but if you find yourself with an abundance of the tangy fruit this slice is the perfect way to put them to good use and a surefire way to impress any guests. Any dessert-style treat that requires no oven time is a win for me. (Note: This recipe was adapted from a recipe available at taste.com.au)
